Spicy Winter Vegetable Soup

A very delicious hearty, healthy soup with a variety of seasonal vegetables including carrots, peppers, mushrooms, green beans, peas, corn or any of your favourite vegetables. The pepper flavour adds a perfect taste for the cold winter days and the aroma of spices will get your tastebuds wanting more. This family treat can be savoured with some warm rolls or croutons.

Ingredients

1 medium onion
Variety of veg – Mexican stir fry mix
1T Olive oil
Few pepper corns
Few fresh curry leaves
Fresh mint
Whole jeera (cumin seeds)
2T flour
Some milk
1T apricot jam
1/2 teaspoon green chili, ginger & garlic mix
Salt to taste
Lemon juice
1/2 liter water
1/2 liter milk

Method

Braise onion with olive oil
Add pepper corns, curry leaves and whole jeera seeds
Add mint and braise further
Then add the veg and braise
Add the green chili mix, salt and lemon juice
Add the water
Bring to the boil
Mix the flour and little milk to make a paste
Add the rest of milk
Then add to the soup mix
Allow to boil – add the apricot jam

Sever hot with bread rolls and croutons.
