Gingerbread Cookies recipe– easy to make with kids

Gingerbread Cookies

This is a brilliant way to get your kids into the kitchen….even if they are boys!! I don’t have daughters so I do a lot of baking with my boys, and  they love it too, as they get to eat what they make.  This weekend we made gingerbread cookies. What’s nice about making GBC, is that the rolling and patting of the dough is actually good for low muscle tone, strengthening the fingers, and the kids love the texture in the hands, so instead of using a biscuit cutter for the GBC, we made it from scratch, the head, body, arms & legs and decorated them with choc chips. You can also use smarties for eyes if you like, and the end product is yum!

Ingredients for the perfect Gingerbread Cookie

  1. 2 cups cake flour
  2. ½ cup brown sugar
  3. 1 teaspoon ginger powder
  4. 1 teaspoon bicarb
  5. ½ cup butter (125 ml) – softened
  6. ½ cup golden syrup
  7. Chocolate chips for decor / can use smarties as well

Let’s make Gingerbread Cookies: Method

  1. Cream butter & sugar (sugar wont melt)
  2. Add dry ingredients and mix well
  3. Add syrup and mix more
  4. Mixture should be almost doughy
  5. Roll up into a big ball
  6. Give a small ball to each child so they can roll and pat into their own ginger bread cookie
  7. Left over dough can be rolled out with a rolling pin and can be cut out with biscuit cutter
  8. And decorate with chocolate chips
  9. Bake at 180 deg for 10-15 min (or when you see the biscuit colour becoming brown)
  10.  Let cool, then have with a nice cup of tea!
