A great meal for those cold winter nights to warm the tummies of your little ones. It looks like there’s a cold front approaching, so this may work well. You can choose whatever meat your family prefers, whether it’s lamb, beef or pork. If you use beef you may need to leave it in the oven for a bit longer. Enjoy and stay warm!
Ingredients
1 1/2 kg neck of lamb cut into nice chunk sizes ( you can substitute pork or beef )
2 large onions peeled n sliced
3 large potatoes – peeled n sliced circular
2 tablespoons chopped fresh parsely
1 teaspoon fresh chopped thyme
salt and milled black pepper
1/2 to 3/4 cup cold water
Method
Set oven to 180 or gas mark 3
Layer the lamb, onions and potatoes in a casserole dish
Sprinkle each layer with herbs and season each layer
Finish the layer with potatoes
Pour in cold water
Cover with a piece of butter greaseproof paper
Cover dish with lid
Cook for 2 to 2 1/2 hours
