Try out this step-by-step recipe to make the perfect home made chicken pie with a melt in your mouth pastry. This pie is filled with a hearty flavour of spices, fresh herbs and finely cubed chicken. The pie can be frozen once baked to enjoy at a later stage as well. Enjoy as a side dish, starter OR main meal. An authentic Grandma’s recipe!
STEP 1: The Pie Pastry
2 1/4cups flour
3 tsp baking powder
125 butter softened
1/2 tsp salt
1 tub cottage cheese
Place all ingredients in food processor, mix to form a dough. Chill overnight.
STEP 2: The Pie Filing
Step 2(a): Prepare the chicken
1 1/2 cups chicken cubed
1 cup mushrooms
Salt, pepper
1 green pepper
Green chili
1 onion
Some parsley
Saute chicken with salt & pepper
Saute onions with peppers and mushrooms, add chicken and spices and simmer. Chill well.
Step 2 (b)Prepare the Sauce:
100 gr butter
2 cups milk (hot)
100 ml cake flour
1/2 cup cheese
Melt butter. Add flour and braise slightly. Now add milk and cheese. Bring to a boil. Simmer till thick. Cool.
Mix Chicken with Sauce.
STEP 3: Let’s fold the Pie!
By now, both your filling and the pastry should be CHILLED.
Roll the dough in a rectangle that will fir your LINED baking tray
Place the dough on the tray.
Place filling down the centre of the dough (lengthwise), leaving 10cm on either side open
Brush dough with egg white
Cut slits to the center and plait
Brush with egg yolk mixed with milk
Bake at 180 degrees for 45 min – 1hr
