Cheesecake Recipe

A delicious light,  rich and creamy cheesecake, decadently indulgent. An easy-to-follow recipe, and the result will leave you feeling proud of yourself. A must try recipe that will delight all your guests.

Ingredients:

Base:

1 and a half packets of tennis biscuits
125g margarine
1tspn sugar
Crumb the biscuits fine, mix with sugar and margarine and set in a springfoam pan. Bake in oven at 180 for 5 minutes and let cool completely.

1st layer:

2eggs
half cup sugar
half tspn vanilla essence
2 tubs smooth (full fat) cottage cheese
Beat eggs and sugar until whitish but not too stiff. Fold in cottage cheese and vanilla essence. Pour onto cooled base and bake at 180 for 15 mins. Cool for an hour.

2nd layer:

2 tubs sour cream
half cup sugar
half tspn vanilla essence
Mix all well together and pour onto the other layer. Bake at 180 for 10 mins. Chill in fridge. Garnish with any fruit, pineapple, kiwi, berries. Enjoy!

Since a friend of mine gave me this recipe, I use it anytime I need to make something special.  I usually cook only to keep my family alive so this always makes me feel super impressed with myself!
