Delicious, healthy choc-chip cookies that anyone can make, it’s that simple.
250g Peanut or any other nut butter
70g Xylitol or honey
50g Chocolate chips or raisins
50g Chopped pecan nuts
2.5ml Baking Soda
- Preheat oven to 180’C
- Soften peanut butter with a wooden spoon, add oats, xylitol, baking soda, chocolate chips and pecan nuts. Stir through.
- Whisk eggs and vanilla with a fork. Mix through and use hands to press dough into a ball.
- Form dough into even balls (approximately 30g each) and place on a baking tray. Flatten a little
- Bake in a preheated oven for 15 minutes until golden brown. Leave to cool and place on a wire rack. The biscuits are very soft initially but harden after a while.
Note: Store in an airtight container and consume within three days.
