My kids love to help make this rice – measuring, chopping, stirring – but the best part is in the presentation as we use a tea/coffee cup to shape the rice and turn it out on each plate.
I like to serve this rice with a substantial fresh salad, avocado slices and some creamy fried mushrooms as well as carrot sticks, olives and baby tomatoes or sundried tomatoes and roasted nuts.
The kids have fun making faces or pictures with all the extras and we usually drizzle some mayonnaise which is also great for drawing. I like to add a dash of soya sauce or balsamic vinegar if the rice is a little dry.
3T olive oil
1 ½ t paprika
¼ c fresh chopped herbs (basil, thyme, oreganum)
1 T chopped parsley
1 t salt
Black pepper to taste
1 ½ c basmati rice
3 c water
½ c tomato puree
1T tomato paste
Heat the oil and then add the next 6 ingredients. Fry for 3 minutes, before adding the water and tomato puree and paste. Bring to boil and simmer with the lid on for about 10 minutes or until cooked.
