{"id":8324,"date":"2015-01-26T10:32:25","date_gmt":"2015-01-26T08:32:25","guid":{"rendered":"https:\/\/responsive.jozikids.co.za\/zaparents\/?p=8324"},"modified":"2022-08-11T17:39:13","modified_gmt":"2022-08-11T15:39:13","slug":"carrot-cake-with-walnuts-and-cranberries","status":"publish","type":"post","link":"https:\/\/www.jozikids.co.za\/blog\/lifestyle\/food-recipes\/carrot-cake-with-walnuts-and-cranberries\/","title":{"rendered":"Carrot cake with walnuts and cranberries"},"content":{"rendered":"<p>Carrot cake is a healthy alternative to many other kinds of cakes.\u00a0 This cake recipe has the added health benefit of cranberries and nuts, plus it makes a great teatime or even lunchbox treat for kids. \u00a0If your kids don\u2019t like nuts you can grind them to a powder to disguise them.<\/p>\n<h2><strong>\u00a0Ingredients<\/strong><\/h2>\n<p>1 1\/2 c grated carrot<br \/>\n1 1\/3 c brown sugar<br \/>\n1\/1\/3 c water<br \/>\n1 c raisins \/ cranberries<br \/>\n2 T butter \/ coconut oil<br \/>\n1 t ground cinnamon<br \/>\n1\/4 t ground cloves<br \/>\n1\/4 t ground nutmeg<br \/>\n1 t vanilla<br \/>\n2 c wholewheat flour \/ combination of rye, oat bran and plain flour (1:1:2)<br \/>\n2 t baking powder<br \/>\npinch of salt<br \/>\n1\/2 c chopped pecans\/walnuts<\/p>\n<h2>Method<\/h2>\n<p>Place the first 4 ingredients in a pot and boil for 5 minutes. Add butter, spices and vanilla and allow to cool. Sift the dry ingredients and add to the wet mixture, before folding in the nuts. Bake at 180&#8221;C in a greased and floured ring mould for about an 50 -60 minutes or until a toothpick inserted comes out clean.<\/p>\n<p>Ice the cooled cake with traditional cream cheese icing (vanilla, 1\/4 c butter, 1\/4 c sugar and one tub of creamed cheese) or serve warm as a pudding with custard. For a quick topping try 1\/2 c prepared custard, cooled and mixed with 1\/2 c thick vanilla flavoured yoghurt poured over the cooled cake.
