{"id":7371,"date":"2014-03-02T20:34:30","date_gmt":"2014-03-02T18:34:30","guid":{"rendered":"https:\/\/responsive.jozikids.co.za\/zaparents\/?p=7371"},"modified":"2022-08-11T17:13:02","modified_gmt":"2022-08-11T15:13:02","slug":"nutty-banana-bread","status":"publish","type":"post","link":"https:\/\/www.jozikids.co.za\/blog\/lifestyle\/food-recipes\/nutty-banana-bread\/","title":{"rendered":"Nutty Banana Bread"},"content":{"rendered":"<p>A great lunch box treat or for breakfast, my son likes his warmed with a block or 2 of dark chocolate on top so that it melts, but it is equally good on its own or with a little butter.<\/p>\n<p>I haven&#8217;t tried it with chocolate chips, but I think you probably could add chocolate chips instead of nuts if you like &#8211; I think the next time my son helps me make it he will probably ask for chocolate chips instead of nuts.<\/p>\n<h2>\u00a0Ingredients<\/h2>\n<p>125g (1\/4 block) butter, softened<br \/>\n1c brown sugar<br \/>\n1\/2c yoghurt or buttermilk<br \/>\n3 large ripe bananas, mashed<br \/>\n3\/4c chopped pecan nuts<br \/>\n2c cake flour<br \/>\n2t baking powder<br \/>\n1\/2t bicarb<br \/>\n1t vanilla<br \/>\n1t ground cinnamon<br \/>\n1\/2t ground nutmeg<\/p>\n<h2>Method<\/h2>\n<p>1. Cream the butter and sugar together.<\/p>\n<p>2. Add the yoghurt, vanilla and bananas and beat for another couple of minutes.<\/p>\n<p>3. Sift the dry ingredients (not nuts) into the wet mixture and fold in gently with the nuts.<\/p>\n<p>4. Oil and flour a bread pan and bake at 180&#8217;C for about 1 hour.<\/p>\n<p>5. Cool in the tin for 10 minutes and then turn out onto a wire rack.<\/p>\n<p>6.
