{"id":6125,"date":"2013-02-15T14:19:07","date_gmt":"2013-02-15T12:19:07","guid":{"rendered":"https:\/\/responsive.jozikids.co.za\/zaparents\/?p=6125"},"modified":"2022-08-13T12:53:04","modified_gmt":"2022-08-13T10:53:04","slug":"easy-carob-and-almond-cake","status":"publish","type":"post","link":"https:\/\/www.jozikids.co.za\/blog\/lifestyle\/food-recipes\/easy-carob-and-almond-cake\/","title":{"rendered":"Easy Eggless Carob and Almond Cake"},"content":{"rendered":"<p>This is a very easy and versatile recipe &#8211; make it for a vegetarian or vegan* friend if you aren\u2019t one yourself!\u00a0 Eggs and dairy are a standard in most homes and commercial baking, denying many veggies the opportunity to partake in much cake eating.\u00a0 This is a delicious cake that everyone can enjoy, so stop excluding your chicken, cow and tree hugging friends from your dinner table today!\u00a0 It is also so easy your kids can help you mix and decorate it.<strong><br \/>\n<\/strong><\/p>\n<h3>Group 1<\/h3>\n<p>2 c vanilla yoghurt \/ milk \/soya or rice milk*<br \/>\n2 T vinegar \/ lemon juice<\/p>\n<h3>Group 2<\/h3>\n<p>1 c oil (canola \/ coconut)<br \/>\n1 \u00bd c brown sugar<br \/>\n1t ground vanilla bean<br \/>\n\u00bd t ground nutmeg<br \/>\n\u00bd t cinnamon<\/p>\n<h3>Group 3<\/h3>\n<p>\u00bd c carob powder, sifted<br \/>\n\u00bc t salt<br \/>\n2 t baking powder<br \/>\n1 t bicarb<br \/>\n1 c cake flour, sifted<br \/>\n1 c polenta<br \/>\n1 c ground almonds (or mix almonds and walnuts)<\/p>\n<h3>Method<\/h3>\n<p>1. Mix the first group of ingredients together in a large mixing bowl.<\/p>\n<p>2. Add the second group of ingredients to the mixing bowl and mix briefly with a wooden spoon.<\/p>\n<p>3. Combine the third group of ingredients well before adding to the wet mixture.<\/p>\n<p>4. Mix well, but quickly and pour into a greased and floured roasting pan.<\/p>\n<p>5. Bake at 180\u2019C for about 30 minutes or until a knife inserted comes out clean.<\/p>\n<figure id=\"attachment_249288\" aria-describedby=\"caption-attachment-249288\" style=\"width: 1200px\" class=\"wp-caption alignleft\"><img fetchpriority=\"high\" decoding=\"async\" class=\"size-full wp-image-249288\" src=\"https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2013\/02\/img_5613-1200x750-1.jpg\" alt=\"\" width=\"1200\" height=\"750\" srcset=\"https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2013\/02\/img_5613-1200x750-1.jpg 1200w, https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2013\/02\/img_5613-1200x750-1-300x188.jpg 300w, https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2013\/02\/img_5613-1200x750-1-1024x640.jpg 1024w, https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2013\/02\/img_5613-1200x750-1-768x480.jpg 768w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><figcaption id=\"caption-attachment-249288\" class=\"wp-caption-text\">Credit: www.onegreenplanet.org<\/figcaption><\/figure>\n<h2 style=\"text-align: center;\">CAKE \u00a0TOPPING<\/h2>\n<p style=\"text-align: left;\">For cake toppings I prefer sauces which are quick and easy to make and also look good.\u00a0 For this cake prepare the topping when the cake is about to come out of the oven:<\/p>\n<h3>Group 1<\/h3>\n<p>\u00bd c butter \/ coconut oil*<br \/>\n3 T carob powder, sifted<br \/>\nA pinch of ground vanilla<br \/>\nor vanilla extract\/tsp vanilla essence<br \/>\nA pinch of nutmeg<br \/>\nA pinch of cinnamon<br \/>\n1\/3 \u2013 \u00bd c brown sugar<\/p>\n<h3>Group 2<\/h3>\n<p>\u00bc &#8211; \u00bd c coconut milk<br \/>\n3 T cornstarch<\/p>\n<h3>Group 3<\/h3>\n<p>\u00bc c ground almonds and or toasted coconut<\/p>\n<h3>Method<\/h3>\n<p>1. Mix the first group of ingredients together in a small saucepan over a moderate heat, stirring to dissolve the sugar.<\/p>\n<p>2. Mix the second group of ingredients together and pour into the saucepan gradually, then raise the heat and stir continuously until the sauce thickens.<\/p>\n<p>3. Pour over the cake (either in the pan or having removed it and placed it on a serving dish).<\/p>\n<p>4.
