{"id":4702,"date":"2012-07-05T00:44:59","date_gmt":"2012-07-04T22:44:59","guid":{"rendered":"https:\/\/www.jozikids.co.za\/zaparents-blog\/?p=4702"},"modified":"2022-08-11T17:32:22","modified_gmt":"2022-08-11T15:32:22","slug":"super-simple-leek-potato-soup","status":"publish","type":"post","link":"https:\/\/www.jozikids.co.za\/blog\/lifestyle\/food-recipes\/super-simple-leek-potato-soup\/","title":{"rendered":"Super Simple Leek &#038; Potato Soup"},"content":{"rendered":"<p>This soup is perfect for a cold winter\u2019s evening.<\/p>\n<h2>Ingredients:<\/h2>\n<p>10 medium potatoes \u2013 peeled and diced<\/p>\n<p>1 bunch of leeks, trimmed and thinly sliced<\/p>\n<p>4-6 tbsp of milk or cream<\/p>\n<p>2-3 tbsp of chopped fresh parsley or chives<\/p>\n<p>7 \u00bd cups of water<\/p>\n<p>Salt and pepper<\/p>\n<p>Cook the potatoes and leeks in a large pan of salted water for 15-20 mins, until the veggies are tender. Remove from the heat and either mash the veggies in the liquid with a fork, or process in a blender. Add salt and pepper to taste. Return to the heat.
