Plus I\u2019ll let you in on a little secret&#8230;you can hide veggies in an amongst all that cheesy tastiness. Our family loves experimenting with a variety of quesadilla flavour combinations and I especially appreciate how quick and easy they are to make (provided you\u2019re buying pre-made tortillas).<\/p>\n<p>Note: If you don\u2019t have a sandwich pan then a non-stick pan will work equally well!<\/p>\n<h2>Roast Butternut, Feta and Coriander Quesadillas<\/h2>\n<p>Makes 4 Medium Sized Quesadillas<br \/>\nTime:\u00a0 I\u2019d say it takes about 30 minutes (including the butternut roasting, which you could do well before hand or you could use left-over butternut, in which case you\u2019d have food on the table in 10 \u201315 minutes.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone wp-image-353142 size-full\" src=\"https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2010\/06\/1200-X-400-_Quesadillas.jpg\" alt=\"Quesadillas\" width=\"1200\" height=\"400\" srcset=\"https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2010\/06\/1200-X-400-_Quesadillas.jpg 1200w, https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2010\/06\/1200-X-400-_Quesadillas-300x100.jpg 300w, https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2010\/06\/1200-X-400-_Quesadillas-1024x341.jpg 1024w, https:\/\/www.jozikids.co.za\/blog\/wp-content\/uploads\/2010\/06\/1200-X-400-_Quesadillas-768x256.jpg 768w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<h2>Ingredients<\/h2>\n<p>500g cubed butternut squash<br \/>\n250ml boiling water<br \/>\n2tbs olive oil<br \/>\n1 vegetable stock cube<br \/>\nSalt &amp; pepper<br \/>\n1tsp cumin<br \/>\n2tbs Dukkah (optional)<br \/>\n2 round wheels of feta cheese<br \/>\nFresh Coriander (optional \u2013 you can also use fresh parsly)<br \/>\n8 medium-sized wraps (flour tortilla)<\/p>\n<h2>Method<\/h2>\n<p>In a bowl toss the butternut, olive oil, salt and pepper. Transfer to a roasting pan.<\/p>\n<p>Place pan under the grill for 10 minutes. \u00a0In the meantime mix together the water, cumin, Dukkah and stock cube.<\/p>\n<p>Remove butternut from the oven and add stock to the roasting pan. Return to under the grill for a further 15 minutes or until the butternut is soft.<br \/>\nOnce the butternut has cooled down a bit, cut into smaller cubes. Place in a bowl.<\/p>\n<p>Cut and cube the feta to the same size of the feta. Add to the butternut.<\/p>\n<p>Roughly chop the coriander and add to the butternut.<\/p>\n<p>Now to make the quesadilla&#8230;<\/p>\n<p>Place a wrap on your press or in a pan. Spoon some of the butternut, feta and coriander mixture onto the wrap. Don\u2019t make it too thick \u2013 you can press down the mixture to make it spread further.
